  • 300g baby new potatoes
  • 2 cloves garlic, smashed

Instructions:

  1. Preheat oven to 200°C (180°C fan).
  2. Boil new potatoes for 10 minutes, then drain. Toss with olive oil, garlic, salt and pepper, and roast for 20 minutes.
  3. Mix breadcrumbs, parsley, lemon zest, and 1 tbsp olive oil. Spread mustard on top of cod, then press on the crust.
  4. Place cod in the oven for the last 12-15 minutes of potato roasting, until flaky and golden on top.

Serve with: Tenderstem broccoli, asparagus or seasonal greens.

Dessert: Sweet Finish Without the Stress
